Lemon Garbanzo Salad with Feta Cheese

With my classes lasting all day with very little breaks, Ive been looking for an easy healthy recipe to bring  with me to class so I dont have to spend absurd amounts of money every day on the drag. And after a couple days I found it! This recipe is great for vegetarians because it has lots of protein aka the garbanzos and quinoa. Also it took me maybe 20 minutes to make! You can stick it in the fridge so it lasts for a week or so and its super delicious!!! I am actually eating it as Im writing this haha! This recipe is also great as like a side salad to your meal.

So here it goes! Lemon Garbanzo Salad with Feta Cheese ! * adapted from myrecipes.com*

Ingredients: 

1/2 cup of boiling water

1/3 cup of uncooked quinoa

1/2 of a lemon

1/2 of a lime

1/3 cup of chickpeas (canned is fine)

1/4 of chopped peeled cucumber

2 tablespoons of feta cheese

2 tablespoons of diced red onion

8 cherry chopped cherry tomatoes

1 slice of a jalapeno (I bought a really spicy jalapeno)

2 teaspoons of extra virgin olive oil

A dash of salt

A dash of pepper

** I just used the vegetables that I liked in this recipe but it would also be good with red and green peppers, dill pickles etc…just go crazy!

Instructions: 

Put a sauce pan on the stove with the water to boil. Once the water has begun to boil put in the quinoa and turn down the heat to let it simmer. I added in a squeeze of lemon while it was simmering so the quinoa would absorb some of its flavor. Let it simmer for around 15 minutes. (The quinoa will soak up the water.)

While the quinoa is cooking chop up the tomatoes, cucumbers, and jalapeno. Combine them in a bowl  with the garbanzos (if they are canned be sure to drain them thoroughly first) and add in the olive oil and spices.

Once the quinoa has finished cooking and has cooled a little bit mix it in with your vegetable mixture. Top it off with feta cheese and put it in the fridge to chill.
