Banana Apple Cinnamon Bread

Nothing beats waking up in the morning and realizing you have nothing planned for the day. You can fall back asleep, watch tv, read a book or in my case, bake! As you may have noticed Im on a bit of a banana bread tear. ITS JUST SO GOOD! I cant help myself annnnddd I might have an abundance of ripe bananas haha. I found this recipe online and decided to make some minor alterations to it aka the apple. It actually turned out really well and Im pretty impressed with myself. So now as I study this beautiful day away I can indulge with a cup of coffee and a slice of my banana apple bread.


1 1/2 cups of flour

1 tsp baking soda

1 tsp baking powder

1/2 tsp salt

3 bananas mashed

1/2 of a granny smith green apple

3/4 cup of white sugar

1 egg beaten

1/3 cup of butter, melted

——— Topping ——–

1/3 cup of brown sugar

2 tbsp of flour

1/8 tsp of ground cinnamon

1 tbsp of butter


Preheat the oven to 375 degrees and grease a 5 x 9 pan.

In a large bowl, mix together the flour, baking soda, baking powder and salt. In a smaller bowl, mash up the bananas and mix in the sugar, egg and melted butter. * I poured this mixture into a blender because Im lazy but it is possible to do this with an electronic mixer or by hand*  Pour the banana puree mixture into the flour mix and stir it until the flour is incorporated into the batter. Peel and chop up half of the green apple into small chunks and mix it into the batter. Spoon the batter into the pan and set aside. ** WARNING! This batter rises like crazy! so be sure to leave room for it to rise or else you get to spend the rest of the evening cleaning the oven… not fun!

In a small bowl mix together the brown sugar, flour and cinnamon. Cut in the butter until it kind of looks like cornmeal. If the mixture starts clumping together (like mine did) add in a little more brown sugar and cinnamon until its dry. Sprinkle the topping over the bread and pop it in the oven.

It should be done in approximately 20 minutes but check on it a little earlier by sticking a toothpick in the bread. If the toothpick comes out clean its done!

On a side note: AUSTIN CITY LIMITS IS IN 12 DAYS! I cannot contain my excitement, I have been waiting for ACL since the last day of ACL last year. So in honor of my favorite music festival I am starting an ACL countdown. For the next 12 days (or whenever I decide to post a new recipe) you will only be hearing bands that are playing. GET EXCITED!
