Back to School Strawberries and Cream Muffins

I woke up this morning (at 7 am…really?!) to the first day of my last year of undergrad. I think I was expecting a more exciting morning, where I would wake up to bluebirds chirping by my window and people would give me high fives on my way to class. Instead my cat woke me up by meowing in my face and I struggled to make my way to class in the heat through the sea of freshmen. It made me think of my first day of first grade, carrying my esmeralda backpack on my shoulders; nervous but excited to learn. 15 years later, Im biking my way to class with a dinosaur backpack (I guess I havent matured much haha) less nervous but still hopeful of the year to come.
So to celebrate, I made these strawberry and cream muffins. My best friend has been nagging me to make these since last year. SO FINALLY! I made them and they came out looking great! Im so excited.

Ingredients:

1 cup strawberries diced

1 squeeze of lime juice

1 cup of flour

1/2 cup of sugar

1 tsp of baking pwdr

1/4 cup vegetable oil

1/3 cup sour cream

1 tsp vanilla

1 large egg

1 tsp powdered sugar

Instructions:

Preheat the oven to 400 degrees and line a 12 cup muffin tin with paper backing cups

Dice the strawberries and put them in a bowl. Squeeze the lime juice and stir gently to combine. In a medium-sized bowl stir together flour, sugar and baking powder. In a small bowl, beat together oil, sour cream, vanilla and egg. Pour mixture over dry ingredients, stirring to combine with a wooden spoon. Fold in strawberries. Divide batter evenly among the paper cups in the muffin tin. Bake for 12 to 14 min or until the toothpick comes out clean.
