Chipotle Shrimp Tacos

Call me texan, but nothing ends a day in the sun better than some delicious tacos. These past couple days have been like a vacation for me. Between summer school in Argentina (dont worry Im not complaining 🙂 ) and work, coming back to austin with nothing to do is so nice!! Though my mind is not completely at ease, it is my last year of undergrad and having to face the future is not an comforting thought. But we all have to move forward and I am planning on take full advantage of this year!
Sorry to ramble, on to the recipe; the most important part of the cooking blog!

Ingredients:

3 cups of frozen peeled shrimp
3 red small potatoes
Mrs. Dash extra spicy seasoning blend
Lowrys season salt
Pepper
2 limes
1/2 of a small onion
1/3 cup of fresh cilantro
Corn tortillas – warmed
Light dairy sour cream
Olive oil

Instructions:

This requires several pans so be ready! Take out the shrimp and let it thaw it for a little bit.

In one pan pour a little bit of olive oil and put in the thawed shrimp. Let the shrimp simmer on medium heat until cooked. Season the shrimp with a couple of dashes of both the season salt and Mrs. Dash (If you like it extra spicy put an extra dash or two of the Mrs. Dash). Once the shrimp is almost done, squeeze the limes ontop to give it an extra kick.
Meanwhile microwave the potatoes for 6 to 7 minutes or until mostly cooked. Take the potatoes out of the microwave and then put them in the pan with a little olive oil. Let it cook on medium heat for another 10 minutes. While cooking chop up the cilantro and onions and throw it in with the potatoes. Season it with some pepper.
When the shrimp and potatoes are almost done, start warming the corn tortillas on medium heat in a small pan.
When everything is finished put the potatoes and the shrimp in the tortilla and top it off with cheese and sour cream.
